Ask not what cinnamon can do for you, but what you can do for cinnamon! Here’s a gob smackingly delicious bagel treat that the whole family can enjoy!
- Gather 1 1/4 cups of warm water, 2 teaspoons of active dry yeast, 2 tablespoons of honey, 2 cups of bread flour, 1 1/3 cups of whole wheat white flour, 1/4 tablespoon of salt, 1 teaspoon of vanilla extract, 2-4 ounces of shredded white chocolate, 1 teaspoon of baking soda, 1 teaspoon of brown sugar, and of course, 2 teaspoons of savory cinnamon.
- To apply a cinnamon crunch topping to your loaf, use 1 beaten egg, 3/4 cup of brown sugar, 3 tablespoons of cinnamon, 1 teaspoon of vanilla, and 4 tablespoons of melted butter.
- Pour water, yeast and honey into an electric mixer with a dough hook, and stir up to a foam before letting it sit for 10 minutes.
- Add bread flour, white whole wheat flour, salt and cinnamon, and mix at low speed for 5 minutes before checking for consistency. If need be, add 1/4 cup of bread flour.
- Knead in some evenly distributed shredded white chocolate and remove the dough before forming it into a ball.
- Apply oil to the inside of a bowl and place the dough inside, then cover with plastic wrap and allow it to rise for 1 hour. Afterwards, flatten the dough onto an even surface and divide into 5 balls, then cover and let sit for 30 minutes.
- Preheat your oven to 350°F (175°C) while boiling a large pot of salted water, then add in baking soda and brown sugar.
- Drop one ball of dough at a time into the boiling water, then boil for a minute at a time before flipping and boiling for another minute.
- Place the dough in a bread pan, side by side.
- Combine brown sugar, vanilla and cinnamon to create the topping, then apply to the tops and sides of the loaf with a beaten egg. Sprinkle your brown sugar and cinnamon mix over the top.
- Drizzle melted butter over the loaf while trying to create some delicious chunks on the loaf.
- Bake for 35-40 minutes, or until the top of the loaf has turned a golden brown colour.
